Four species of tuna are marketed in large quantities from Hawaii. Three Ahi's (Bigeye, Yellowfin, Albacore) and Aku (Skipjack) are all migratory seasonal fish and are most commonly used for sashimi (raw fish). They can all be cooked in a wide variety of ways. |
